INGREDIENTS
1 medium Sweet Potato
3 large Eggs
1 large Egg White
1 turkey Sausage link (approx. 2 oz)
1 cup Spinach
1/4 cup chopped Yellow Onion
1 teaspoon Olive Oil
1 Garlic Clove
Salt and Pepper, to taste
PREPARATION
Peel and dice the sweet potato into small cubes.
Heat half the olive oil in a nonstick skillet over medium heat. Add the sweet potato cubes and a pinch of salt, cooking until they start to become crispy and tender, about 8-10 minutes. Stir occasionally to prevent sticking.
While the sweet potato cooks, finely chop the onion and garlic.
In another small pan, add the remaining olive oil and sauté the chopped onion and garlic until they soften slightly, about 2-3 minutes. Add the spinach and cook until just wilted. Season with a bit of salt and pepper, then remove from heat.
In the sweet potato pan, push the potatoes to one side. Add the turkey sausage link and allow it to heat and brown slightly, turning it occasionally to ensure even cooking.
Once the turkey sausage is warmed through, create a small space in the pan and carefully crack three eggs and one egg white. Cook the eggs sunny-side up, covering the pan for a minute if needed to help set the whites while keeping the yolks runny. Season with salt and pepper.
Gently mix in the sautéed greens and onions with the sweet potato and sausage hash. Plate the hash and top with the sunny-side up eggs.
Serve immediately and enjoy your nutrient-packed, flavorful meal.
