INGREDIENTS
6 oz Wild Salmon Fillet (170g)
6 Asparagus Spears (90g)
1 cup Cauliflower (107g)
1 tbsp Olive Oil (14g)
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the salmon fillet dry with a paper towel, and season both sides lightly with salt and black pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a crisp crust forms.
Flip the salmon and sear the other side for an additional 3-4 minutes until the salmon is cooked through but still moist.
While the salmon is cooking, steam the asparagus spears until they are bright green and tender, approximately 4-5 minutes.
In a small pot, combine the chopped cauliflower with a splash of water and steam until very tender, about 8-10 minutes.
Once the cauliflower is soft, transfer it to a bowl and add the olive oil along with a pinch of salt and pepper. Mash until smooth and creamy. Adjust seasonings as needed.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
