PREPARATION
Preheat the oven to 400°F (200°C).
Drain the tofu and press it to remove excess moisture. Cut the tofu into 1-inch cubes.
In a large bowl, gently toss the tofu cubes with olive oil, garlic powder, smoked paprika, salt, and pepper.
Add the broccoli florets (cut into bite-sized pieces) and sliced red bell pepper to the bowl with tofu. Toss everything together until evenly coated.
Spread the mixture onto a baking sheet in a single layer.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the tofu is crispy and the vegetables are tender with slight char edges.
