1 cup Baby Spinach
2 tbsp Hummus
1 tsp Extra Virgin Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat a grill pan over medium heat.
Slice the tempeh into 1/4-inch pieces and lightly brush with olive oil, then season with salt and pepper.
Slice the zucchini and red bell pepper into strips.
Grill the tempeh slices for about 3-4 minutes on each side until you see grill marks. Remove and set aside.
