INGREDIENTS
6 oz Ground Turkey
2 Portobello Mushrooms
1 cup Spinach
1/2 cup Diced Tomato
1/2 cup Red Bell Pepper
1/4 cup Onion
1 clove Garlic
1 tbsp Olive Oil
Salt & Pepper, Italian Herbs
PREPARATION
Preheat your oven to 375°F (190°C).
Remove the stems from the Portobello mushrooms and gently scrape out the gills with a spoon.
Finely dice the onion, red bell pepper, tomato, and garlic.
In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until fragrant and slightly translucent.
Add the ground turkey to the skillet. Break it apart and cook until it starts to brown.
Stir in the diced red bell pepper, tomato, and spinach along with Italian herbs, salt, and pepper. Cook until the vegetables are softened and the spinach wilts.
Place the mushroom caps on a baking sheet. Spoon the turkey and vegetable mixture evenly into each mushroom cap.
Bake in the preheated oven for 15-20 minutes, until the mushrooms are tender and the filling is heated through.
Remove from the oven and serve warm.
