INGREDIENTS
4 oz Lean Ground Turkey (113g)
1 medium Sweet Potato (150g)
1 large Egg (50g)
2 cups Fresh Spinach (60g)
1 tsp Olive Oil (4.5g)
1/4 medium Onion (25g)
1 clove Garlic (3g)
Salt and Pepper to taste
PREPARATION
Preheat a skillet over medium heat and add the olive oil.
Dice the sweet potato into small cubes and finely chop the onion and garlic.
Add the diced sweet potato and onion to the skillet. Sauté until the sweet potato begins to soften, about 5-7 minutes.
Stir in the ground turkey, breaking it up with a spatula, and cook until browned and fully cooked, approximately 7-8 minutes.
Mix in the garlic and cook for an additional minute.
Push the mixture to one side of the skillet and crack the egg into the empty space. Cook the egg to your desired doneness.
Add the fresh spinach on top of the ingredients and let it wilt for 1-2 minutes. Season the dish with salt and pepper to taste.
Gently combine all components and serve warm.
