PREPARATION
Preheat your oven to 400°F. Wash the sweet potato and poke a few holes with a fork. Roast the sweet potato on a baking sheet for about 45 minutes or until tender.
While the sweet potato is roasting, heat a non-stick skillet over medium heat with the olive oil.
Slice the turkey sausage into rounds and add to the skillet. Sauté for 3-4 minutes until lightly browned.
