INGREDIENTS
180g Atlantic Cod Fillet
1 tbsp Miso Paste
2 tsp Olive Oil
1 cup Broccoli
1 cup Cooked Brown Rice
1 tbsp Toasted Sesame Seeds
1 tsp Fresh Ginger
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Prepare the miso glaze by mixing miso paste, minced garlic, grated fresh ginger, and lemon juice in a small bowl.
Pat the cod fillet dry with paper towels. Brush the miso mixture evenly over the top side of the fish.
Heat olive oil in a non-stick skillet over medium-high heat. Place the cod, glaze side up, into the skillet.
Sear the cod for about 3-4 minutes until a golden crust forms, then carefully flip and cook for another 2-3 minutes until the fish is opaque and flakes easily.
While the cod is cooking, steam the broccoli until tender yet crisp, about 4-5 minutes.
Prepare the brown rice according to package instructions if not already cooked.
Plate the cod alongside the steamed broccoli and a serving of brown rice. Drizzle a little of the warm skillet juices over the top and sprinkle toasted sesame seeds for added crunch and flavor.
Finish with an additional squeeze of lemon if desired and serve immediately.
