INGREDIENTS
6 ounces cooked Shrimp (approx. 170g)
1/2 whole Avocado (approx. 100g)
1 medium Tomato (approx. 123g)
1 small Red Onion (approx. 70g)
1 small Cucumber (approx. 100g)
2 tbsp Fresh Cilantro, chopped
1 small Jalapeño, seeded and diced
2 tbsp Lime Juice
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Peel and devein the shrimp if needed, then roughly chop them into bite-sized pieces.
Dice the tomato, cucumber, and red onion into small pieces. Remove seeds from the jalapeño and finely chop.
Cut the avocado in half, remove the pit, and dice the flesh into cubes.
In a medium bowl, gently combine the shrimp, tomato, cucumber, red onion, jalapeño, and cilantro.
Pour in the lime juice and toss lightly. Season with a pinch of salt and freshly ground black pepper.
Add the diced avocado last to avoid mashing, and gently fold it into the mixture.
Let the ceviche marinate for 10 minutes in the refrigerator to allow the flavors to meld. Serve chilled.
