INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half the olive oil. Once hot, add the salmon, skin-side down if applicable, and sear for about 3-4 minutes until a golden crust forms. Flip and cook another 3-4 minutes for medium doneness. Remove and set aside.
Meanwhile, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender yet crisp.
For the cauliflower mash, break the cauliflower into florets and steam for about 8-10 minutes until very tender. Transfer the steamed cauliflower to a blender along with the remaining olive oil, garlic, a pinch of salt and pepper, and blend until smooth, adding a splash of water if necessary to reach a creamy consistency.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve warm and enjoy!
