INGREDIENTS
4 large Eggs
1/2 cup Canned Chickpeas (drained)
1 cup Crushed Tomatoes (no salt added)
1 medium Red Bell Pepper
1/2 medium Onion
2 Garlic Cloves
1/2 tsp Olive Oil
2 tbsp Fresh Parsley
2 tbsp Fresh Cilantro
1 tsp Ground Cumin
1 tsp Smoked Paprika
Salt and Pepper to taste
PREPARATION
Heat the olive oil in a deep skillet over medium heat.
Add the chopped onion, red bell pepper (diced), and minced garlic. Sauté until softened and fragrant, about 3-4 minutes.
Stir in the ground cumin and smoked paprika and cook for another minute.
Pour in the crushed tomatoes and add the chickpeas, stirring to combine. Allow the mixture to simmer for about 5 minutes so the flavors meld together.
Make four small wells in the tomato sauce and carefully crack an egg into each well.
Cover the skillet with a lid and let the eggs poach in the simmering sauce for 5-7 minutes, or until the eggs reach your desired doneness.
Season with salt and pepper to taste, and sprinkle the chopped fresh parsley and cilantro over the top before serving.
