INGREDIENTS
7 oz Salmon Fillet
6 spears Asparagus
1.5 cups Cauliflower
1/4 cup Unsweetened Almond Milk
2 tsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper.
Heat 1 tsp olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon skin-side down and sear for about 4-5 minutes until a crust forms, then flip and cook for an additional 3-4 minutes or until desired doneness.
Meanwhile, trim the asparagus and steam them for about 5-6 minutes until tender but still crisp.
In a small saucepan, combine cauliflower florets, garlic, and a pinch of salt with a splash of water. Cover and cook over medium heat for 8-10 minutes until very tender.
Transfer the cauliflower and garlic to a blender, add unsweetened almond milk and the remaining 1 tsp olive oil, then blend until smooth. Taste and adjust seasoning as needed.
Plate the seared salmon alongside steamed asparagus, and serve with a generous scoop of the cauliflower mash, finished with a drizzle of lemon juice.
