INGREDIENTS
7 oz Salmon Fillet
1 medium Sweet Potato
2 cups Fresh Spinach
1 tsp Olive Oil (for spinach)
1 tbsp Olive Oil (for salmon)
1 tbsp Butter
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat and season the salmon fillet with salt and pepper.
Drizzle 1 tablespoon olive oil in the skillet and place the salmon skin-side down. Sear for about 4-5 minutes each side until cooked through, then remove from the skillet and let rest.
Meanwhile, peel and cube the sweet potato. Boil in a pot of water until tender (about 15-20 minutes), then drain.
Mash the sweet potato with 1 tablespoon butter. Season with a pinch of salt and pepper as desired.
In another pan, heat 1 teaspoon olive oil over medium heat. Add minced garlic (from 2 cloves) and sauté for 30 seconds until fragrant.
Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes. Season with salt and pepper.
Plate the mash, top with the garlicky spinach, and place the seared salmon fillet on the side.
Serve immediately and enjoy your balanced, nutrient-packed dinner.
