INGREDIENTS
1.5 cups cooked Brown Lentils (297g)
3 ounces Firm Tofu (85g)
0.5 cup diced Carrot (78g)
0.5 cup diced Celery (50g)
0.5 cup diced Onion (80g)
0.5 cup Diced Tomatoes (90g)
1 cup Fresh Spinach (30g)
1 cup Low-Sodium Vegetable Broth (240g)
1 teaspoon Olive Oil (5g)
PREPARATION
Rinse the lentils under cold water and set aside if using pre-cooked lentils. If using dry lentils, cook them according to package instructions until tender.
In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté until the vegetables begin to soften, about 4-5 minutes.
Stir in the diced tomatoes and cook for another 2 minutes.
Add the cooked lentils, cubed firm tofu, and vegetable broth to the pot. Bring the mixture to a simmer.
Allow the stew to simmer for 10-12 minutes so the flavors meld together.
Just before serving, stir in the fresh spinach and let it wilt into the stew.
Season with salt and pepper to taste. Serve hot and enjoy your hearty, nutritious stew.
