1 medium Sweet Potato (approx. 150g)
1 medium Red Bell Pepper
1 small Yellow Onion
1 tsp Olive Oil
1 clove Garlic
1/2 tsp Smoked Paprika
Salt and Black Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and yellow onion, and mince the garlic.
Heat a non-stick skillet over medium heat and add the olive oil. Sauté the onions and garlic until they begin to soften, about 2 minutes.
Add the diced sweet potato to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the sweet potato starts to become tender and slightly crispy.
Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until the turkey is browned and fully cooked through, about 5-6 minutes.
