INGREDIENTS
6 oz Lean Ground Turkey
1 large Bell Pepper
1/2 cup Cauliflower Rice (cooked)
1/4 cup Diced Tomatoes
2 tbsp Onion, chopped
1 tsp Olive Oil
1 clove Garlic, minced
1 tsp Cumin
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Cut the top off the bell pepper and remove the seeds. Set aside the pepper top for later use if desired.
In a skillet over medium heat, warm the olive oil. Add chopped onions and minced garlic, cooking until softened and fragrant.
Add the lean ground turkey to the skillet and cook until it starts to brown, breaking it up into small pieces.
Mix in the cauliflower rice, diced tomatoes, and cumin. Season with salt and pepper. Allow the mixture to cook for an additional 3-4 minutes until everything is well combined and heated through.
Spoon the turkey mixture into the hollowed bell pepper, packing it in firmly.
Place the stuffed pepper in a baking dish and cover with foil. Bake in the preheated oven for 20-25 minutes, or until the bell pepper is tender.
Remove from the oven and let cool for a few minutes before serving.
