Enjoy a vibrant plate featuring perfectly seared salmon paired with garlicky green beans and a creamy cauliflower mash. This dish brings together succulent, tender fish with the crunch of fresh green beans and the smooth, comforting texture of mashed cauliflower, all enhanced with a hint of olive oil and lemon.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Green Beans
1 cup Cauliflower
2 tsp Olive Oil
2 cloves Garlic, minced
1 Lemon wedge
Salt & Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper. Squeeze a little lemon juice over it.
Heat a non-stick skillet over medium-high heat and add 1 tsp olive oil.
Place the salmon in the skillet, skin side down if applicable, and sear for about 3-4 minutes per side until a golden crust forms and the interior reaches your desired doneness.
While the salmon is cooking, steam the green beans until they are tender-crisp, about 4-5 minutes.
In a small saucepan, steam the cauliflower florets until very tender, about 8-10 minutes.
Drain the cauliflower and mash it with a fork or potato masher. Mix in the remaining 1 tsp olive oil, minced garlic, a pinch of salt and pepper, and a squeeze of lemon juice for brightness.
Plate the seared salmon alongside the garlic green beans and a generous scoop of cauliflower mash. Serve immediately.
