INGREDIENTS
6 oz Salmon Fillet (170 g)
6 Asparagus Spears (100 g)
1.5 cups Cauliflower (150 g)
1 tbsp Olive Oil for mash
1 tsp Olive Oil for drizzle
1 clove Garlic
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat with a drizzle of olive oil. Sear the salmon, skin-side down first if applicable, for about 3-4 minutes on each side until a golden crust forms and the fish is nearly cooked through.
While the salmon cooks, trim the tough ends of the asparagus and steam them for about 4-5 minutes until tender but still crisp.
Cut the cauliflower into florets and steam until very soft, about 8-10 minutes. Transfer to a food processor.
Add 1 tbsp olive oil, one garlic clove, a squeeze of lemon juice, salt, and pepper to the steamed cauliflower. Blend until smooth and creamy, adjusting seasoning as needed.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of the cauliflower mash. Drizzle 1 tsp olive oil over the asparagus for extra flavor, if desired.
Serve warm and enjoy your nutritious dinner.
