INGREDIENTS
5 oz Beef Sirloin Strips
1 cup Whole Wheat Noodles (cooked)
2 cloves Garlic
2 tsp Olive Oil
1 cup Mixed Vegetables (zucchini, red bell pepper, carrot)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F for the baked vegetables.
Toss the mixed vegetables with a little olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 20-25 minutes or until tender and slightly caramelized.
While the vegetables are baking, cook whole wheat noodles according to package directions. Drain and set aside.
In a skillet over medium-high heat, add 1 teaspoon of olive oil. Once hot, add the beef strips, season with salt and pepper, and sear them for 3-4 minutes until nicely browned but still tender.
In the same skillet, add the remaining olive oil and minced garlic. Sauté for about 30 seconds until fragrant. Toss in the cooked noodles to coat them evenly with the garlic oil.
Plate the garlic noodles as a base, top with the seared beef strips, and arrange the baked vegetables on the side. Serve immediately.
