Enjoy a beautifully balanced meal featuring a crispy, pan-seared salmon fillet accented with a bright burst of lemon and fresh herb aroma alongside tender, sautéed asparagus spears. This dish delivers delicate flavors and a satisfying crunch, perfect for a healthy dinner.
INGREDIENTS
5 oz Salmon Fillet
1 serving Asparagus Spears (approx 134g)
1 tsp Extra Virgin Olive Oil
1/2 Lemon (juice and zest)
1 tbsp Fresh Thyme
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt, pepper, and half of the fresh thyme.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down in the skillet and cook for 3-4 minutes until the skin is crisp. Flip the fillet and cook for an additional 3-4 minutes, or until the salmon reaches your desired doneness.
While the salmon cooks, trim the woody ends off the asparagus and heat another pan over medium heat. Add a splash of olive oil, then add the asparagus with a pinch of salt, pepper, and the remaining thyme. Sauté for 3-4 minutes until they are tender but still crisp.
Squeeze the juice from the half lemon over the asparagus and salmon, and add a bit of lemon zest for extra brightness.
Plate the salmon alongside the asparagus and serve immediately.
