Seared Chicken Thighs with Garlic Green Beans and Cauliflower Mash
Enjoy a savory dinner featuring perfectly seared chicken thighs served with garlicky green beans and a silky cauliflower mash, all brought together with a hint of olive oil and fresh garlic for a satisfying and balanced meal.
INGREDIENTS
200g Boneless Skinless Chicken Thigh
1 cup Green Beans (125g)
1 cup Cauliflower (107g)
1 tsp Olive Oil (for searing)
2 tsp Olive Oil (for mash)
2 Garlic Cloves
Pinch Salt
Pinch Black Pepper
PREPARATION
Pat the chicken thigh dry and season both sides with a pinch of salt and black pepper.
Heat 1 tsp of olive oil in a non-stick skillet over medium-high heat. Add the chicken thigh and cook for about 5-7 minutes per side until nicely seared and fully cooked. Transfer to a plate and let it rest.
While the chicken cooks, trim the ends of the green beans. In a separate pan, add a little water and 1 crushed garlic clove. Sauté the green beans over medium heat until tender-crisp, about 5 minutes. Season with salt and pepper to taste.
For the cauliflower mash, steam the cauliflower florets until soft (about 8-10 minutes). In a blender or using an immersion blender, combine the steamed cauliflower, 2 tsp olive oil, 1 garlic clove, and a pinch of salt and pepper. Blend until smooth and creamy.
Plate the dish by placing a generous serving of cauliflower mash and green beans alongside the seared chicken thigh. Garnish with a light drizzle of extra olive oil or additional cracked pepper if desired.
