INGREDIENTS
4 oz Salmon Fillet
1/2 tsp Extra Virgin Olive Oil
5 Asparagus Spears
1 cup chopped Cauliflower
1/4 cup Nonfat Greek Yogurt
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat a non-stick pan over medium-high heat and add 1/2 tsp of extra virgin olive oil.
Once the oil is hot, sear the salmon fillet for about 3-4 minutes on each side until the exterior is golden and the inside is just opaque.
While the salmon is cooking, steam the asparagus spears in a steamer or a covered pan with a small amount of water for about 4-5 minutes until they are tender but still crisp.
For the cauliflower mash, steam 1 cup of chopped cauliflower until very tender, about 8-10 minutes.
Transfer the steamed cauliflower to a bowl and mash it using a fork or blend for a smoother texture. Stir in 1/4 cup of nonfat Greek yogurt until the mash is creamy. Season with a pinch of salt and pepper.
Plate the seared salmon with the steamed asparagus and a serving of cauliflower mash on the side. Serve warm and enjoy!
