Enjoy a vibrant dinner featuring a perfectly seared chicken thigh paired with a tender slice of chicken breast, complemented by garlicky green beans and a creamy sweet potato mash. This dish brings together a symphony of flavors and textures that are both satisfying and balanced.
INGREDIENTS
100g Chicken Thigh (boneless, skinless)
50g Chicken Breast (skinless)
100g Green Beans
150g Sweet Potato
1 tsp Olive Oil (for searing)
0.5 tsp Olive Oil (for green beans)
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Season the chicken thigh and chicken breast lightly with salt and pepper.
Heat 1 tsp of olive oil in a nonstick skillet over medium-high heat. Once hot, add the chicken thigh and sear for about 4-5 minutes per side, or until golden and cooked through. For the chicken breast, reduce the heat slightly and add it to the pan, cooking for about 3-4 minutes per side until nicely browned and internal temperature reaches 165°F.
Meanwhile, peel (if desired) and chop the sweet potato into chunks. Boil or steam them until tender, about 10-12 minutes.
Mash the cooked sweet potatoes with a fork or potato masher. Season with a pinch of salt and pepper. If you like a creamier mash, you can add a little water from the boiling pot.
In another pan, heat 0.5 tsp olive oil over medium heat. Add minced garlic (from 2 cloves) and sauté briefly until aromatic, then toss in the green beans. Sauté for about 4-5 minutes until they are bright green and tender-crisp, stirring occasionally.
Plate the dish with a serving of sweet potato mash, drizzle the garlic green beans alongside, and slice the seared chicken for easy eating. Serve immediately and enjoy the blend of savory chicken with the fresh flavors of garlic and sweet potato.
