INGREDIENTS
6 oz 93% Lean Ground Turkey
0.5 tsp Olive Oil (for searing)
1 cup chopped Broccoli
1 tsp Olive Oil (for roasting broccoli)
1 cup chopped Cauliflower
2 tbsp Nonfat Greek Yogurt
1 tbsp Olive Oil (for mashed cauliflower)
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
In a small bowl, gently mix the ground turkey with a pinch of salt, pepper, and one minced garlic clove. Form the mixture into a patty.
Heat a skillet over medium-high heat and add 0.5 teaspoon olive oil. Sear the turkey patty for approximately 4-5 minutes per side until it's fully cooked and has a nice brown crust.
While the turkey cooks, toss the chopped broccoli with 1 teaspoon olive oil, a little salt and pepper, and spread it out on a baking sheet.
Roast the broccoli in the oven for 12-15 minutes until edges are crisp and tender.
Steam or boil the chopped cauliflower until fork tender (about 8-10 minutes).
Drain the cauliflower and transfer it to a blender or use a masher. Add the remaining minced garlic (1 clove), 2 tablespoons of nonfat Greek yogurt, and 1 tablespoon olive oil. Blend or mash until smooth and creamy. Season with salt and pepper to taste.
Plate the seared turkey patty with a side of roasted broccoli and a generous scoop of garlic mashed cauliflower. Enjoy your balanced dinner!
