Enjoy succulent prawns seared to perfection with a burst of lemon and garlic, paired with tender, roasted asparagus dressed in olive oil. This dish brings together bright citrus notes and savory garlic, creating a delightful balance of flavors and textures perfect for a healthy dinner.
INGREDIENTS
8 oz Prawns (227g)
1 bunch Asparagus (approx. 8 spears, 100g)
1 tbsp Extra Virgin Olive Oil (14g)
1/2 medium Lemon (juiced, approx. 30g)
1 clove Garlic (3g)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Trim the tough ends off the asparagus and place them on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
Roast the asparagus in the preheated oven for 10-12 minutes until tender and slightly charred.
While the asparagus is roasting, pat the prawns dry and season with a pinch of salt and pepper.
Heat a non-stick skillet over medium-high heat and add the prawns. Sear the prawns for 2-3 minutes on each side until they turn pink and opaque.
In the last minute of cooking, add the minced garlic and drizzle with lemon juice, stirring well to combine the flavors.
Plate the seared prawns alongside the roasted asparagus and serve immediately, garnishing with a squeeze of fresh lemon if desired.
