INGREDIENTS
8 oz Cod Fillet
1 cup Asparagus
1/2 cup Cooked Green Lentils
2 tsp Olive Oil
1 tbsp Lemon Juice
Salt and Pepper to taste
1 tsp Garlic Powder
PREPARATION
Preheat your oven to 400°F (200°C).
Place the cod fillet on a lightly greased baking sheet. Drizzle with 1 tsp olive oil, season with salt, pepper, and garlic powder, and add a splash of lemon juice over the top.
Arrange asparagus on the baking sheet beside the fish. Toss the asparagus with the remaining olive oil, a pinch of salt and pepper.
Bake in the oven for about 12-15 minutes or until the fish is opaque and flakes easily with a fork, and the asparagus is tender.
While the fish and asparagus are baking, prepare the lentil mash. If needed, warm the pre-cooked green lentils in a small pot and gently mash them with a fork. Stir in the lemon juice, salt, and pepper to taste.
Plate the baked cod with a side of roasted asparagus and a serving of lentil mash.
Finish with an extra squeeze of lemon juice on top and serve immediately.
