INGREDIENTS
5 oz Lean Ground Beef (90% lean)
1/2 cup diced Red Bell Pepper
1/2 cup diced Yellow Onion
1/2 cup sliced Zucchini
1 tsp Olive Oil
1 clove Garlic
1 tbsp Fresh Parsley
Salt & Pepper to taste
PREPARATION
Preheat the oven to 425°F (220°C).
On a baking sheet, toss the diced red bell pepper, diced yellow onion, and sliced zucchini with olive oil, salt, and pepper.
Roast the vegetables in the preheated oven for 15-20 minutes, stirring halfway, until tender and slightly charred.
While the vegetables roast, heat a skillet over medium heat and add the lean ground beef. Break up the meat with a spatula.
Add the minced garlic to the beef during the last 2 minutes of cooking. Season with salt, pepper, and stir in chopped fresh parsley.
Once the vegetables are roasted and the beef is fully cooked, plate the ground beef and top with the roasted vegetables.
Finish with an extra sprinkle of fresh parsley if desired, and serve warm.
