Seared Salmon with Roasted Asparagus and Sweet Potato Mash
Enjoy a well-balanced dinner featuring a perfectly seared salmon fillet accompanied by crisp, roasted asparagus and a creamy sweet potato mash. This dish offers a satisfying mix of textures and flavors, with the rich, savory taste of salmon balanced by the natural sweetness of the potato and the freshness of the asparagus.
INGREDIENTS
6 oz Salmon Fillet (170g)
1 cup Asparagus (134g)
80g Sweet Potato
1 tsp Olive Oil
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Toss the asparagus with half of the olive oil, salt, and pepper; spread it on a baking sheet and roast for 10-12 minutes until tender and slightly crispy.
Peel (if desired), dice, and steam the sweet potato until soft. Then mash it with a pinch of salt, pepper, and the lemon juice for brightness.
Season the salmon fillet with salt and pepper. Heat the remaining olive oil in a skillet over medium-high heat.
Place the salmon skin-side down in the skillet. Sear for about 3-4 minutes to achieve a crispy skin, then gently flip and cook for another 3-4 minutes until the salmon is just cooked through.
Plate the seared salmon alongside the roasted asparagus and a serving of sweet potato mash.
Optionally, drizzle a little extra lemon juice over the salmon for an added zesty finish.
