Seared Salmon with Garlic Green Beans and Cauliflower Mash
Enjoy a vibrant plate of seared salmon paired with crisp garlic green beans and a silky cauliflower mash. The savory salmon is lightly seasoned and pan-seared to perfection, while the green beans deliver a fresh, garlicky crunch and the mashed cauliflower provides a wholesome, creamy complement to the dish.
INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
0.5 tsp Nutritional Yeast
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down (if applicable) and sear for about 3-4 minutes, then flip and cook for an additional 3-4 minutes until cooked through.
Meanwhile, steam the green beans until they are just tender, about 4-5 minutes, and sauté the minced garlic in a separate pan for 1 minute before tossing the green beans in to coat with the garlicky flavor.
For the cauliflower mash, steam the cauliflower until very soft (about 8-10 minutes). Transfer to a bowl and mash with a fork or immersion blender, stirring in lemon juice, nutritional yeast, salt, and pepper.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve warm.
