INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 clove Garlic
1 cup Cauliflower
1 tsp Extra Virgin Olive Oil
Pinch of Salt
Pinch of Black Pepper
1 Lemon Wedge
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, sear the salmon for about 3-4 minutes on each side, or until a golden crust forms and the fish is cooked to your liking.
Meanwhile, steam the green beans until just tender, about 4-5 minutes. In a small pan, lightly sauté the minced garlic in a few drops of water or a tiny bit of olive oil and toss with the steamed green beans.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer to a bowl and mash with 1 teaspoon of extra virgin olive oil, a pinch of salt and pepper until smooth.
Plate the salmon alongside the garlic green beans and a serving of cauliflower mash. Squeeze a lemon wedge over the salmon for a bright, fresh finish.
