250g Extra Firm Tofu
1/2 cup Chickpeas (82g)
1 tbsp Olive Oil
2 tbsp Lemon Juice
2 cloves Garlic
1 tsp Paprika
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Cut the cauliflower into bite-sized florets and press the tofu to remove excess moisture before cutting into cubes.
In a large bowl, toss the cauliflower florets, tofu cubes, and chickpeas with olive oil, paprika, salt, and pepper.
Spread the mixture evenly on a baking sheet lined with parchment paper.
