8 Asparagus Spears (134g)
1 cup Cauliflower (107g)
1 tsp Olive Oil (5g)
1 Garlic Clove

PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half the olive oil. Once hot, sear the salmon, skin-side down first if applicable, for about 3-4 minutes per side until the exterior is caramelized and the interior is just opaque.
While the salmon is cooking, steam the asparagus spears in a steamer or in a covered pan with a splash of water for about 4-5 minutes until tender but still crisp.
In a small pot, steam the cauliflower florets for about 8-10 minutes until soft. Alternatively, microwave chopped cauliflower with a splash of water for 5-6 minutes.
Transfer the steamed cauliflower to a bowl and add the garlic clove (minced or lightly crushed), the remaining olive oil, a pinch of salt and pepper, and mash until smooth with a fork or immersion blender.
