Hearty Caramelized Onion Soup
A warm and comforting bowl of caramelized onion soup enriched with tender shredded chicken breast, infused with garlic and fresh thyme, and simmered in a savory low-sodium broth. This nourishing soup offers a delightful balance of sweet, savory, and herbal notes, perfect for any meal of the day.
INGREDIENTS
2 medium Yellow Onions (approx. 300g)
6 oz Chicken Breast, skinless and boneless (approx. 170g)
1 tablespoon Olive Oil
1 Garlic Clove
2 cups Low-Sodium Chicken Broth
1 teaspoon Fresh Thyme
Salt and Pepper to taste
PREPARATION
Thinly slice the onions and mince the garlic.
In a large pot, heat the olive oil over medium heat.
Add the onions and a pinch of salt, then cook slowly, stirring occasionally, until the onions are deeply caramelized (this may take 25-30 minutes).
Add the minced garlic and fresh thyme during the last 5 minutes of caramelizing.
Pour in the chicken broth and bring the mixture to a simmer.
Meanwhile, season the chicken breast with salt and pepper, then grill or poach until fully cooked, about 6-8 minutes per side depending on thickness. Once cooked, shred the chicken into bite-size pieces.
Add the shredded chicken into the simmering soup and allow it to heat through for 5 minutes.
Taste and adjust seasoning with more salt and pepper if needed before serving.
