INGREDIENTS
6 oz Shrimp
1 cup Whole Wheat Pasta (cooked)
1 tsp Olive Oil
2 cloves Garlic
2 tbsp Lemon Juice
2 tbsp Fresh Parsley
2 tbsp Fresh Basil
Salt and Pepper to taste
PREPARATION
Bring a pot of salted water to a boil and cook the whole wheat pasta according to package directions until al dente. Drain and set aside, reserving a little pasta water.
While the pasta cooks, pat the shrimp dry with paper towels and season lightly with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and sear on each side for 1-2 minutes or until they turn pink and are just cooked through. Remove shrimp from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Add the lemon juice to deglaze the pan, scraping up any browned bits. If desired, add a splash of reserved pasta water to create a light sauce.
Return the shrimp to the skillet, toss to combine, then add the cooked pasta along with chopped fresh parsley and basil. Mix everything together ensuring the pasta is well coated with the lemon garlic sauce.
Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed. Serve warm.
