INGREDIENTS
5 oz Salmon Fillet
1 cup Steamed Broccoli
1.5 cups Cauliflower
1 clove Garlic
1 tsp Olive Oil
1 tbsp Nonfat Greek Yogurt
Salt & Pepper to taste
PREPARATION
Pat the salmon dry, season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down in the skillet. Sear for about 3-4 minutes until the skin becomes crispy. Flip and cook for an additional 3-4 minutes until cooked through.
Meanwhile, steam the broccoli until tender, approximately 5-6 minutes.
For the cauliflower mash, add cauliflower florets and garlic to a pot of boiling water; cook for about 8 minutes until soft.
Drain the cauliflower and garlic, then transfer to a bowl. Mash with a fork or immersion blender until smooth.
Stir in the nonfat Greek yogurt, and season with salt and pepper. Adjust consistency with a splash of water if needed.
Plate the seared salmon alongside the steamed broccoli and a generous serving of garlic cauliflower mash. Serve immediately.
