INGREDIENTS
7 oz Salmon Fillet
1 medium Sweet Potato
1 cup Green Beans
1 tbsp Olive Oil
1 tbsp Butter
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Preheat a non-stick skillet over medium-high heat with 1/2 tbsp olive oil.
Sear the salmon for about 3-4 minutes on each side until nicely browned and just cooked through. Transfer to a plate.
Peel and chop the sweet potato into cubes. Boil in salted water until tender, about 15 minutes.
Drain the sweet potato and mash with butter, a pinch of salt, and pepper.
In the same skillet, add the remaining 1/2 tbsp olive oil and minced garlic. Sauté for about 30 seconds until fragrant.
Add the green beans and stir-fry for 4-5 minutes until crisp-tender, seasoning with salt and pepper.
Plate the sweet potato mash alongside the garlic green beans and top with the seared salmon.
Serve warm and enjoy your balanced, nutrient-packed dinner.
