Preheat your oven to 400°F. Peel and dice the sweet potato into small, even cubes.
Toss the sweet potato cubes with a pinch of salt, pepper, and a drizzle of olive oil, then spread on a baking sheet and roast in the oven for about 20 minutes until tender.
