INGREDIENTS
6 oz Salmon Fillet (~170g)
1 cup Asparagus (~134g)
80 g Sweet Potato
1 tsp Olive Oil (~5g)
1 tbsp Lemon Juice (~15g)
Salt and Black Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and black pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Sear the salmon fillet skin-side down for about 3-4 minutes until it turns golden, then flip and cook for an additional 3-4 minutes until done to your liking.
While the salmon cooks, steam the asparagus until just tender, approximately 4-5 minutes.
For the sweet potato mash, lightly steam or microwave the chopped sweet potato pieces until soft. Mash them with a fork until smooth and stir in the lemon juice and a pinch of salt.
Plate the seared salmon alongside the steamed asparagus and a serving of sweet potato mash. Optionally garnish with an extra squeeze of lemon juice and additional pepper.
