PREPARATION
Beat the 3 whole eggs and 2 egg whites in a bowl until well combined. Season lightly with salt and pepper if desired.
Chop the red onion, dice the half bell pepper, and roughly chop the fresh spinach.
Heat a non-stick skillet over medium heat and lightly coat with olive oil spray.
