INGREDIENTS
300g Extra Firm Tofu
1 cup broccoli (approx. 150g)
1 medium bell pepper (approx. 100g)
1 tbsp Olive Oil
1 tsp Garlic Powder
1 tsp Paprika
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Press the tofu for at least 15 minutes to remove excess moisture. Cut the tofu into 1-inch cubes.
In a bowl, toss the tofu cubes with olive oil, garlic powder, paprika, a pinch of salt, and black pepper until evenly coated.
Arrange the tofu on a lined baking sheet and bake for 25-30 minutes, flipping halfway, until the tofu is crispy and golden.
Meanwhile, chop the broccoli into florets and the bell pepper into strips. Toss them with a drizzle of olive oil, salt, and pepper.
Spread the vegetables on another baking sheet and roast in the oven for 15-20 minutes, until tender and slightly charred.
Serve the crispy baked tofu over a bed of roasted broccoli and bell peppers. Enjoy warm!
