INGREDIENTS
5 medium Tomatoes (600g)
1/2 cup chopped Fresh Basil
4 oz Chicken Breast, cooked and diced
1 small Yellow Onion, chopped
2 Garlic Cloves, minced
1 tbsp Extra Virgin Olive Oil
2 cups Low-Sodium Chicken Broth
Salt and Pepper to taste
PREPARATION
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic; sauté until the onion becomes translucent and aromatic.
Chop the tomatoes into chunks and add them to the pot. Sauté for a few minutes to blend the flavors.
Pour in the chicken broth and bring the mixture to a simmer. Allow it to cook for about 10-15 minutes until the tomatoes soften.
Using an immersion blender, blend the soup to a smooth consistency, leaving a few chunks for texture if desired.
Stir in the chopped fresh basil and season with salt and pepper. Adjust seasoning to taste.
Fold in the diced, pre-cooked chicken breast and let it warm through for about 5 minutes.
Serve hot and garnish with a few fresh basil leaves if desired.
