INGREDIENTS
6 oz Chicken Breast (170g)
1 cup Broccoli (91g)
1 tbsp Low Sodium Soy Sauce (16g)
2 tsp Honey (14g)
1 tsp Olive Oil (4.5g)
1 tsp Fresh Ginger, minced
1 clove Garlic, minced
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
Toss the broccoli in a light drizzle of olive oil, salt, and pepper if desired, and spread it out on a baking sheet. Roast in the oven for 15-20 minutes until the edges are crispy and tender.
Season the chicken breast lightly with salt and pepper.
In a small bowl, combine the low sodium soy sauce, honey, minced ginger, and minced garlic to create the sticky teriyaki glaze.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil. Once hot, add the chicken breast and sear for about 4-5 minutes on each side until golden brown.
After the chicken is nearly cooked through, pour the teriyaki glaze over it in the pan. Let it simmer for 1-2 minutes until the glaze thickens and clings to the chicken.
Serve the pan-seared chicken with the roasted broccoli on the side. Drizzle any remaining glaze from the pan over the chicken for extra flavor.
