INGREDIENTS
6 oz Salmon Fillet
0.5 cup dry Brown Rice Pasta (approx 56g)
2 cups Fresh Spinach
1 Garlic Clove
2 Tablespoons Olive Oil
PREPARATION
Bring a pot of water to a boil and cook the brown rice pasta according to the package instructions until al dente. Drain and set aside.
Season the salmon fillet with salt and pepper.
In a non-stick skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the salmon fillet skin-side down and cook for about 4-5 minutes until a golden crust forms.
Flip the salmon and cook for an additional 3-4 minutes, or until the fish is cooked through but still moist. Remove the salmon from the skillet and let it rest.
Using the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant.
Add the fresh spinach to the skillet and toss until just wilted, about 2-3 minutes. Season lightly with salt and pepper.
Plate the drained brown rice pasta and top with the warm garlic spinach. Place the pan-seared salmon on top or on the side as preferred.
Serve immediately and enjoy your balanced and flavorful meal.
