INGREDIENTS
6 oz Salmon Fillet
1 cup Fresh Green Beans
1 medium Sweet Potato
2 tbsp Non-fat Greek Yogurt
2 cloves Garlic
2 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat with 1 teaspoon of olive oil.
Season the salmon fillet with salt and pepper. Once the skillet is hot, sear the salmon, skin-side down first if applicable, for about 3-4 minutes per side until it reaches your desired doneness. Remove the salmon and set aside.
In the same skillet, add the remaining olive oil and gently sauté the minced garlic for about 30 seconds until fragrant.
Add the fresh green beans to the skillet and sauté for about 4-5 minutes until they are tender-crisp. Season lightly with salt and pepper.
Meanwhile, peel and dice the sweet potato. Boil in lightly salted water until tender, around 10-12 minutes. Drain well.
Mash the cooked sweet potato with 2 tablespoons of non-fat Greek yogurt until smooth and creamy. Adjust seasoning with salt and pepper if needed.
Plate the salmon alongside a serving of garlic green beans and a generous scoop of sweet potato mash. Serve warm and enjoy.
