Seared Salmon with Steamed Asparagus and Cauliflower Mash
Enjoy a perfectly seared salmon paired with crisp steamed asparagus and a creamy cauliflower mash. The dish balances lean protein and nutrient-dense vegetables, all finished with a drizzle of extra virgin olive oil for a delicious, satisfying dinner.
INGREDIENTS
6 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower Florets
1.5 tbsp Extra Virgin Olive Oil
1 Garlic Clove
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add 1 tablespoon of the olive oil. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until a golden crust forms. Flip and cook for an additional 3-4 minutes until done to your preference.
While the salmon cooks, bring a pot of water to a boil and steam the asparagus spears for about 4-5 minutes until tender but still crisp.
For the cauliflower mash, steam the cauliflower florets (and the garlic clove) for about 8-10 minutes until very tender. Transfer to a blender or use a hand masher, adding the remaining 0.5 tbsp olive oil, salt, and pepper to taste. Blend or mash until smooth and creamy.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of cauliflower mash. Drizzle any remaining olive oil over the plate if desired and serve warm.
