400g Extra Firm Tofu

2 cloves Garlic, minced
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Press the tofu for at least 20 minutes to remove excess moisture, then slice into steak-like pieces.
In a shallow dish, combine the tofu with olive oil, minced garlic, lemon juice, fresh herbs, salt, and pepper. Allow to marinate for 15 minutes.
Preheat the oven to 425°F (220°C). Arrange the red bell pepper, zucchini, and red onion on a baking sheet. Drizzle with a small amount of olive oil, and season with salt and pepper.
Roast the vegetables in the oven for 20-25 minutes, stirring once halfway through, until they are tender and slightly caramelized.
