INGREDIENTS
6 oz Salmon Fillet
1 medium Russet Potato
100 grams Broccoli
1 tsp Olive Oil (for salmon)
1 tsp Olive Oil (for mash)
2 tbsp Fresh Herbs (Parsley & Dill)
1 Garlic Clove
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry, then season with salt and pepper.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Add the salmon fillet skin side down and sear for about 3-4 minutes per side, until cooked through and lightly browned.
Meanwhile, peel and cube the russet potato. Boil in salted water until tender, about 10-12 minutes.
Drain the potato and return it to the pot. Add 1 teaspoon olive oil, minced garlic, chopped fresh herbs, and a pinch of salt and pepper. Mash until smooth and creamy.
Steam the broccoli by placing it in a steamer basket over boiling water for about 5 minutes until crisp-tender.
Plate the seared salmon alongside a generous serving of herb potato mash and steamed broccoli. Serve warm and enjoy.
