INGREDIENTS
300g Extra-Firm Tofu
100g Cucumber
2 Tbsp Peanut Butter
1 tsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Maple Syrup
1 tsp Sesame Oil
1 tsp Garlic Powder
1 Tbsp Crushed Peanuts
PREPARATION
Press the tofu for at least 20 minutes to remove excess water, then cut it into 1/2-inch cubes.
Preheat the oven to 400°F. Toss the tofu cubes with garlic powder and a light drizzle of sesame oil to evenly coat.
Arrange tofu on a lined baking sheet and bake for 25-30 minutes, turning once halfway until edges are golden and crispy.
While the tofu bakes, thinly slice the cucumber and set aside in a serving bowl.
In a small bowl, mix the peanut butter, soy sauce, rice vinegar, maple syrup, and remaining sesame oil to create the dressing. Adjust thickness with a splash of water if needed.
Once tofu is crispy, add it on top of the cucumber, drizzle generously with the peanut dressing, and sprinkle with crushed peanuts.
Serve immediately and enjoy the delightful balance of textures and flavors.
