INGREDIENTS
6 oz Sirloin Steak
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
1 medium Potato
1 tsp Butter
1 tbsp Fresh Herbs (Parsley/Chives)
Salt and Pepper (to taste)
PREPARATION
Pat the sirloin steak dry and season generously with salt and pepper on both sides.
Preheat a heavy skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes per side for medium-rare, or adjust the time to achieve desired doneness. Remove steak and let it rest.
While the steak rests, prepare the mashed potatoes. Peel (if desired) and dice the potato, then boil in lightly salted water until fork-tender, about 15 minutes. Drain the potatoes and mash them with butter and fresh herbs, seasoning with salt and pepper to taste.
Trim the ends of the green beans. In a small pan, heat the olive oil over medium heat, add one minced garlic clove, and sauté for 30 seconds until fragrant. Add the green beans and sauté for 4-5 minutes until they are tender-crisp. Season with salt and pepper and add the remaining minced garlic in the final minute of cooking.
Plate a portion of mashed potatoes alongside the green beans and sliced steak. Garnish with extra herbs if desired and serve immediately.
