INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Unsalted Butter
1 tsp Extra Virgin Olive Oil
1 Lemon wedge
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil. Once hot, sear the salmon skin-side down for about 4 minutes, then flip and cook for another 3 minutes until cooked through.
While the salmon is cooking, steam the green beans in a steamer basket over boiling water for 4-5 minutes until tender yet crisp.
For the cauliflower mash, steam the cauliflower until soft (about 8 minutes). Transfer to a bowl and mash with a fork or immersion blender. Stir in the butter, and season with a pinch of salt and pepper.
Plate the seared salmon alongside the steamed green beans and a generous serving of cauliflower mash. Squeeze a lemon wedge over the salmon for a burst of freshness before serving.
